One of the most common ways servers steal money is by using the \u201cfloating tab\u201d scam. In this scam, a server takes an order from a customer and then pockets the cash payment instead of ringing it up on the register. The server then creates a \u201cfloating tab\u201d by adding the amount of the unpaid bill to another customer\u2019s bill. The server then pockets the cash payment from that customer as well, and so on.
